The Story of Piestro
We are Flavia Harte and Nick Faulkner after having moved to Dartmouth in 2016 from the Cotswolds, Piestro opened in May 2017. We had quite different careers beforehand, so have stepped out of our comfort zone to do this, but we’ve long held a passion for cooking. We have been warmly welcomed by people to the town and are keen to give something back. We do have catering in our blood – Flavia’s uncle was a chef in Buckingham ˚Palace for King George VI. One of Nick’s ancestors was a member of London’s Pastry Cooks Guild in 1766! ‘Devon wrapped in a pie’ says it all. Everyone loves a pie whether it’s a fish pie, cottage pie, homity pie or a simple steak & kidney pie. Dartmouth ‘does’ fish so well that we thought we’d offer something different. We’ve carried out a lot of research and training e.g. at the Exeter Cookery School, to provide a menu that really stands out. Our pies are special – they’re home made on the premises each day – we don’t buy-in pie cases, instead we make our own pastry using superior ingredients, organic flour and butter. Our pies are 360 degrees, not simply a casserole with a pastry lid on top. The pastry is light, melt-in-the-mouth shortcrust pastry, prepared to a consistent quality and thickness with really delicious homemade meat, vegetable or fish fillings. It’s a very skilled process – each pie is hand-crafted. We’ve invested significantly in a state of the art oven and pastry equipment specifically designed for the purpose of making pies. Our pies are cooked to order to accentuate their taste and freshness, not simply heated up and held warm. It takes 25 minutes to deliver our pies from order to plate but we can assure our customers that the wait is more than worth it. There’s some tasty Devon charcuterie and pate, Dartmouth crab, olives etc to whet your appetite whilst you wait – the pie is the main event! We are totally committed to using locally sourced ingredients – our meat is from near Kingsbridge, our chicken from Buckfastleigh. We’ve a selection of craft ales from South Hams Brewery, Devon lager and cider. There is wine and cheese from Sharpham, a selection of 5 Devon gins and soft drinks from Luscombe of Buckfastleigh. Truly ‘Devon wrapped in a pie’. We also have a range of alternatives for those who would prefer something other than a pie.
